Our final 3-5s class parent meeting was a potluck and Stephanie (mom of Ella) knocked it outta the park with her delicious strawberry pie. This recipe includes some soaking, lots of blending but zero cooking. I’ll admit that I had to look up what lecithin granules are but I will buy a tub of them if it means I can make this pie all summer long.
Raw Strawberry Pie

CRUST:
1 cup Almonds
1 cup Brazil nuts
6-8 Dates
1 tsp Cinnamon
¼ tsp Salt
In a food processor, blend all ingredients. Press firmly into a pie pan and chill.
FILLING:
2 ½ cups Cashews (soaked 3-4 hours)
½ cup Agave Syrup
2 tsp Vanilla
½ cup Lemon Juice
24 oz Strawberries
½ cup Coconut Oil (liquid)
¼ cup Coconut Butter (liquid)
4 Tbsp Lecithin Granules
Pinch of Salt
In a food processor or Vitamix blender, process cashews until doughy. Add next 3 liquids and process until smooth. Add lecithin and process/pulse. Slowly add strawberries while machine is running. Add oil and butter. Pour into crust and chill for 4 hours.
Top with fresh strawberries or a sauce made from these ingredients blended together:

2 Tbsp Agave Syrup or 2 Dates
